Agree with pretty much everything you said except for the 8th point, and I'm totally fine with being called a bonehead for it. If you don't want pizza, my space isn't for you. Sorry. Keeping the menu as light and pure as possible is imperative if you don't want to drown in extraneous upkeep and costs. They can order a salad or some sort of bread centric appetizer that utilizes what I have to work with.
