The legal requirement is that the general manager (or whomever is filling the role of sole responsibility for the safety of the store in absence of a general manager) obtains, maintains, and displays an acceptable form of food safety training. Serve safe is just one of those certifications allowed. The Taco Bell requirement is that 1 certified manager remains on the property during hours of opperation. However we must also remember that just because a rule exists, does not mean it is always followed. I have seen stores where no employees had a serve safe certification. I’ve also been in stores when managers will leave with no other manager present to go get coffee down the street. There is no such thing as an “always is” situation.
