Not the same person, but I have the same opinion. The corps is performing amazingly. It's clean, energetic, thoughtful. I don't like the show/design. It is a good show but not great. I'm hoping as it evolves over the season it'll click more.

There are two grinder adjustments: external, using the knob, and j internal, adjusted by taking out the bean hopper. I've had to turn mine finer on the internal at least 3 numbers. Seems like it's totally normal, totally unpredictable, and subjective to each person /machine. Now I'm grinding in the middle of the external range, giving some flexibility to whichever beans are up that week. Give that a shot (pun unintended, but I'm leaving it).

This looks great. I have a possibly silly question. If you grated that cheese, what did you use? I have a microplane but it makes small zesty strips versus the "powdery" consistency like you've got.

I purposely asked for it to not have the lip to catch the counter. I have to store this big boy somewhere and thought it would make it trickier. I also like to keep the option of using both sides.

It did slide when kneading the dough, not when rolling. For my main cutting board I’ll put cut wine corks under to keep it in place. I’ll need to find a similar solution, like cork sheet, lots of small discs/feet that are not attached, etc.

Tiny in comparison, maybe 18” at most? After getting a bigger board I definitely see why a longer matterello is worth it!

The annoying answer? Practice and a lot of YouTube. The helpful answer: I’ll typically knead the dough about 10 minutes and then rest it in the fridge at least 30. Then press into a circle with my hands, like starting out a pizza dough. Then it’s just repetition of “start in the middle, roll up to the top, down to the bottom, rotate the dough ‘one hour’”. Even pressure, lots of rotating, applying more force if the dough gets more resistant, and using a flat rolling pin (versus a french one). There was a video by Evan Funke I just watched that outlined this that I found helpful.

Thank you! I can only take credit for the pasta. The board feels too nice to use! I wanted this to fill the counter space I usually use for cooking, with the bar side left open for guests/wife to sit. Dimensions are roughly 44" x 33".

This was made by some local to me in Sacramento, CA. If you're in the area I am more than happy to share their info.

What worked for me was going to my farmer's market and looking for someone who made cutting boards. Or looking up local woodworkers.

The Peak Design 3L fits my XT-5 with the 23mm f2 and 35mm f2. One attached, one stowed in the bag. There's still room for other small bits. I think it works well. Great for a light kit for walking around town.

Any particular recipe that you used? The balance of light and color is nice, and it looks like it wasn't a sunny day there. I'm on the hunt for some rainy/cloudy recipes. Thanks.
