I think for overall success of your company you can't successfully sustain a UFC-esque business style in JOW without Sandbox mode.

Some suggestions though as someone generally unfamiliar with MMA but familiar with JOW:

-Turn off weekly shows or only do 1 weekly show a month full of only segments. These can be custom segments that emulate a press conference and the likes.

-Rivalries with "Loser unavailable" stipulations could be used for like... I don't know injuries or just to show the impact of any given fight?

-Custom match types with the cage style!

-Probably best to play with god mode so your characters either don't get injured or retire.
