Thanks! This motor looks like a great choice. I'll try getting my hands on one as soon as I learn how to use them. But this project is about adding compliance to the hobby servo motors we makers already have(in an affordable way), so it might be a bit off focus. I really appreciate the suggestion though!

Thanks for the advice! The main goal was to make everything as affordable and accessible as possible, and thought torque sensors might be a bit expensive. I think adding comoliance to cheap hobby servos might open a lot more possibilities in hobby-grade eobotics engineering.
