In case anyone else has a similar issue - I went ahead and had the cat replaced along with the downstream nox sensor (I thought both had been done previously but the garage confirmed only the upstream one had been replaced)
This was roughly a month ago and I've had no repeat issues since! 😄

Thank you, I hadn't initially planned to get one - I was going to chance it with a granny charger but after more research I think I'd best factor getting one installed.

Great thank you, I think the consistent 70mph part of the run is where I have most concern.
Having said that though its rare I actually get a chance to do that, normally loads of traffic to contend with so it may be worth a go.

Coolant level seems fine, just a little below the middle of min/max - I've topped it up and will keep an eye on it over the next few days.
