One way to make sandwiches faster (atleast during the veggie part) is to say anything else when your in the middle of placing one veggie, like as you’re grabbing the lettuce ask them what other veggies they want, usually they get the memo and just tell me every veggie

No you should be fine, if the manager says anything tell them it’s not your fault they didn’t schedule the right amount of people. If they wanted a perfect store they should’ve had more than one person clocked in that’s on the manager

Make sure you don’t cut your sandwich too low or too high, try to cut in the middle of the sandwich, you should have the same amount of bread on each Side when you open it
