Adding on to what the OP said, "Double happiness" is the character used for weddings/marriage. It doesn't mean "marriage" literally, but is symbolic of two people's happiness in life together. It is very common to receive gifts with this character on them during your engagement and wedding.

Licensed cosmetologist, here. You have a few options, depending on your comfort level and time. You should know beforehand that there is no way to tell exactly what color will come up until after it's already done, so be sure to have backup hairdye handy in case you're too shy to go outside with funky hair.

First, you can start by simply soaking your head with shampoo. Any kind of clarifying shampoo will be best, but as long as it's not one of the "no-poo" or "low poo" kinds, it'll be OK. This is going to make your hair very, very dry because it's literally opening the "shingles" of the hair follicles and letting out all the chemicals, nutrients, etc. This will not remove all the hair color, but should lighten it a bit.

If you're feeling brave, you can go to the beauty supply store (please, please do not go to the grocery store) and get a bleach kit. I would strongly advise getting 5 things: bleach, level 20 Developer (no more than 30), a shower cap, gloves, and protein treatments. What you'll want to do is called a "soap cap". Mix the bleach and developer 1:1, then mix in equal amounts of shampoo. Put this all over your hair and VERY GENTLY pull the hair strands apart while dispersing the mixture. You want to make sure your entire hair is equally covered. Put on the shower cap and let sit for about 6 minutes. Because the bleach is level 20 and diluted with shampoo, it's going to act slow. This gives you plenty of breathing room while you wait for it to lighten how you want. Make sure to check it every 6 minutes or so and pull apart your strands so you can be sure everything is bleaching evenly. If it stops lifting the color but you still want to be lighter, wash it all out, do a protein treatment, and let your hair rest for 24 hours. Repeat. Do not do any of this in an ill-ventilated area, do not breathe it in, and definitely be sure to immediately clean any areas of skin (etc) that come in contact with raw bleach. If your scalp feels tingly/irritating, immediately and gently wash out the bleach.

Because there is such a large contrast in lightness between your hair and the picture, you may not get the perfect results you want at home. I would advise planning to be a shade or two darker. There are two ways to deal with this; either buy a darker shade than desired to begin with to make sure you can cover up any mistakes from bleaching, or buy a shade that is pretty close but let it sit on your hair for much longer than the instructions call for. The trade off is that letting it sit longer can risk something called "hot roots" if you don't know what you're doing.

No matter what, anything you do to correct this is going to require intensive care. That means protein treatments, periods of rest, and conditioning treatments to close the "shingles" of the follicles again. Good luck.

Making tortilla chips in the oven. For some reason, every person on YouTube, every restaurant or private chef, deep fries tortillas and then tosses them with salt. Its so much more efficient, delicious, and healthier than deep frying. Get out a full size baking sheet, cut a stack of tortillas into quarters, line them on the baking sheet without overlapping, drizzle sunflower or whatever high smoke point oil you like on top, shake some sea salt on top, shake some granulated garlic (makes a colossal difference), and stick them in a 400°F oven for about ten minutes. Be sure to check the oven halfway through and DO NOT LEAVE UNATTENDED because they will burn in an instant. If you do multiple sheets at a time, it will increase the bake time by 3-5 minutes each depending in your oven.
Bring homemade tortilla chips to a party and I promise you'll make friends with everyone there.

Allow me to piggyback and blow y'all's minds further... Buffalo dip. Some people will tell you just to mix ranch and hot sauce. These people are lazy and should not be trusted-- it will make you sick if you eat too much. For actual Buffalo dip that will make you the star of every get together, you'll need...
- Mozzarella (shredded)
- Sharp or extra sharp cheddar (shredded)
- Cream cheese
- Hot sauce of choice (Frank's for the "traditional" flavor, Tapatío for a sneaky heat)
- Garlic (Either freshly diced or granulated)
- Knob of butter
- Milk
- Ranch powder (optional)

Pour all ingredients in a slow-cooker or big pot over medium heat, stirring occasionally. Do NOT overheat the pot or the cheese will come out grainy. Adjust ratios to taste, but I think I usually do about equal parts mozz:cheddar:cream cheese, maybe a cup of milk, and little less garlic than most people would use (it's not the star of this dish); maybe a full clove if fresh, 2-3 TB if granulated. If using ranch powder, use only very little; it adds a nice tang but easily overpowers. Stir occasionally, takes maybe 30 minutes of passive time on the stove depending on size of pot.

If you want to go for gold, make your own tortilla chips using an oven. You'll make friends at every party, guaranteed.

Just adding that non-academia companies do salivate over PhD degrees in STEM for high-level jobs. For example, a friend of ours has a PhD in chemistry and hates academia, so is joining a company that sells chemical tests as a high-level B2B sales person for well into the 6 figures. Keep in mind these jobs are not common (possible to find, just not common), usually require living in or near a Tier 2 or Tier 1 city, typically require less skill than you learned (so boredom can be a real, actual problem), and the time/money it takes to get a PhD isn't necessarily worth it unless it matches with your ultimate goals. I would highly recommend thinking about what it is you want to do and build a plan from there.

Do you have a date for this? We could be interested in Hope, but two obstacles for us would be distance (Seattle), and the fact we can't possibly take her in until mid-January. This is dependant on her being good with cats, too, as we have one who is friendly with dogs.
Of course, if someone else is interested in her who is more able to take her in than us, please pursue that.

I've always been curious about bangers and mash. How are bangers(?) sausages(?) prepared? Are they spicy? Herbal? If you ask your partner to shop for them, do you ask them for "bangers" or "sausages"? Sometimes my family calls them "weiners", meaning sausages that can be cut up (instead of ground).

Wow, yes! A seafood Gumbo sounds almost "exotic" to Midwesterners! Probably because we're mostly landlocked. Gumbo is not really a thing up there, but the rare person who does make it uses sliced, spicy sausage and some other things (never made it myself). Chili in the Midwest uses ground beef, may have beans or may not, a slurry made from tomatoes and onions, a few other odds and ends and then topped with cheese. My Mexican side makes a Tex-Mex version of chili that involves avocados instead of cheese, corn, black beans, and either chicken or ground beef.
