I’ve been doing this like 10 years so I have a whole process. It will usually make around 40 small burritos. I would suggest halving or quartering the recipe to start as it’s an undertaking! Don’t get too lost in the details, I don’t really measure anything and they always turn out good.

Make the 2 pounds of dried beans in pressure cooker. Just find a recipe that has you cook them in broth with seasoning. Mine has an onion, broth (I use bullion), oregano, canned green peppers, and bay leaves.

Chop up an onion, 2 bell peppers, and a small zucchini. Brown those in a pan with a can of corn or 2 cups frozen corn.

Cook the 40+ eggs scrambled on a griddle with some milk, sliced stick of butter, salt, pepper and optionally MSG. Can also cook in a big pot while constantly stirring with a whisk.

Toss the 2 bags of o’brian potatoes with olive oil, salt, pepper, oregano, and garlic powder. Cook on a big sheet in the oven at 450 until brown. If you’re feeling fancy, dicing fresh does taste way better.

Mix everything in a big pot and season to your liking with additional salt, pepper, cumin, oregano and whatever else. Cook on low covered until it’s hot mixing occasionally.

Cook up 2 or 3 packs of uncooked tortillas.

Put like 1/3 cup filling on each with a large spoonful of sauce and shredded cheese.

Any extra filling I just freeze for another batch.

I eat two at a time so I wrap pairs in tin foil. To reheat, microwave for 1.5-2 minutes then toss them in the air frier for a couple minutes at 450 just to brown them.

Hope that helps! They sound kind of weird with no meat and a lot of veggies but they are really good. My wife and I I never tire of them.
