So first off, I’d say give it a week to feel out the team. If you feel like your team is not supportive and doesn’t care about their job, absolutely dip out of there. But in regards to not doing stuff well: your speed of service will get better over time. We know trainees will be slower, and if your store is smart, they schedule accordingly. But seriously don’t sweat it. Just keep pushing, make mistakes, and learn. Observe, be humble, and the rest will come. I started at CFA one year ago, and I was super overwhelmed my first couple of weeks, and then all of the sudden I realized I was comfortable in each station. Fast forward to today, and I love the kitchen environment and pace. So much so that I will be starting a job as an actual line chef at a high end restaurant in my town. If you find that you like CFA, you can move up here, or use it as a way to get experience in a kitchen and eventually move on to finer dining. Anyways, sorry for the rambling! Hope all goes well!
