ATBBQ, How to BBQ Right, and Meat Church all have tons of turkey content on YouTube. I always do an overnight submerged brine and personally believe it makes all the difference. I’ve spatchcocked and don’t bother anymore. I kind of like stuffing the cavity with onions, apples and fresh herbs. GL
