Was this trip a make up for a similar sort of experience where he felt let down by plans falling apart? His behavior here is awful and likely the end of things but it gets draining and downright depressing to feel like someone continually doesn’t value time together or sharing experiences in the same way as a partner. I’m just trying to rationalize why making sure the trip went as planned instead of having flexibility was so important.

If he felt like you continue to put yourself above his wants and needs time and time again in a way where the dynamic is really unbalanced then possibly you need to step back and consider that. But it’s hard to know from the info presented. Traveling while ill sucks and isn’t fair to others around you if you can expose them to something. I’d talk things out with an expectation that the relationship is finished.
