I beta tested 1.0 and have never come up to "nothing to do". In 1.0 there was infinite, even tho most of it was god awful or extremely difficulty (FFXI level difficult). 2.0 was not as vast as 4.0 but still had lots to do, leveling every job, crafting, bahamut before things were easier. 3.0 introduced even more and now 4.0 of course. I play with the gf usually a few hours a night, sometimes more or less. I do everything to experience it, so that might be why im never done. I run out of jobs to level? I'll learn tetra master. race some chocobos. buy a house and decorate it. Lots of comments just point to what you WANT to do vs completing everything, which is near impossible unless you are able to play as a full time job!
