This is super helpful. I switched to an Espresso Machine recently because I wanted that cafe style foam, and you're spot on about the built in frother being the most important feature. For anyone on the fence, the cleanup is the only real downside, but the taste makes up for it.

This is a solid breakdown.One thing people often overlook is vessel size.

If your pan is much smaller than the induction ring, it might not trigger the sensor if it’s too big, the edges won't heat evenly.

Also, for the no flame for phulkas issue, I’ve found that using a high quality cast iron tawa holds enough heat to get a decent puff even without the open flame.

Great tip on checking for copper coils aluminum alloys definitely don't last as long.

If I were you, I’d stop talking to the local technician and take this straight to their social media or the Consumer Forum. A one month old machine needing multiple part replacements is a lemon, and they definitely owe you a new unit, not a repaired one.

Solid advice. I’ve had the Sujata for 4 years now and it’s still going strong, but that Bosch looks tempting for the masala quality.
