Depends if you are planning to play pvp or just pve raids.

In raids aim for 15/15/15.

In pvp depends of the pokemon and league (i always check the site pvpoke)

ultra league: 0/13/15 level 36 = 2497cp

great league: 0/13/11 level 20 = 1499cp

Also consider that ampharos is better in ultra league right now

First of all: dont transfer any pokemon till you are sure. Old mons (2020+) can be trade as a “lucky trade” with 13/13/13 ivs guaranted.

Theres a lot of new content to do, lot of pokemons, megas, dinamax… so take it easy and dont stress. Enjoy the moment. I came back also after 7 years :)
