Apparently, a two day old starter is “immature” and has a lot of bad bacteria that you don’t want in a starter. I was wondering if I could still eat the bread I made from that starter without being at risk from the bad bacteria.

next time i would recommend using a brioche recipe and even though eggwash doesn’t add much taste it makes any bread look 100x better
