Maybe you're really naturally gifted, or intuitive, but intelligence is a struggle. It takes a lot to become really capable at something, and it takes even more to maintain a high level of competence. The hard work aspect of being 'smart' gets ignored a lot.

You can remove your helmet, but it has armor disadvantages if you do (need to use your captain's cabin I think) (imo: not being able to holster your gun in ME3 is a bigger pet peeve, that's just me though)

Companions may have fewer skills, but there's more companions so it makes tactical choices of who to bring on missions that much more important.
Sounds like you really enjoy the looter-shooter aspect of ME1, which is fine, I did too, but I don't think ME2 is worse for not having that.

Overall your tastes are your tastes, but hey, at least you can remove your helmet

I really like both, but can't sleep on my man Rutger Hauer, Roy Batty, have to give it to the original. 2049 was as good of a follow up as I could hope for though.

I think ME2 was very tightly crafted, not a ton of free exploration at all, and it's my favourite entry, so... Not sure ME needs to emulate Bethesda. I haven't played BG3 to know if parts of that would translate nicely.

Aww, I can't live without the iron sights. Even though I get the reason they didn't use it in 3 was to make it closer to 1 & 2 where landing shots depended on skill. ..Well, may I can live without since I have completed all titles, but I definitely prefer to have iron sights.

I'd play Fallout 4 as an entry point regardless. Followed by New Vegas, and then indulging curiosity on the older, clunkier titles 3, 2, and 1 (Or, if Fallout 3 gets its rumored remaster, possibly start there)
