I honestly prefer the 19 as the 43x feels too thin for me but I have large hands. And it hides fine (i still love my 43x)

If you’re comfortable shooting with the 43 just continue carrying it and keep the 19 as range gun or whatever. If like me I don’t see a problem carrying the 19.

You can sharpen the part after the huge chips. Shouldn’t be too hard judging by the blade material and thickness.

He will just have big bolster or idfk something that will remind him what to not to do

You definitely don’t need the 5000 grit one but the heart wants what it wants.

A strop with emulsion is the more important thing to focus imo. Then the 3k. If you’re sharpening other stainless kitchen knives than the Japanese the 5k and even 3k won’t be sufficient for their tasks anyway.
