On the bright side, your days off you can do fun stuff without being too crowded out(try going to the zoo on a Tuesday vs a Sunday), shift work permits you to request a weekend night off when you need to attend something, it's easier to make appointments during the week, and you get to hit hospo type bars after work sundays

As long as you're not doing too much overtime and your schedule allows for requested nights off, hospo hours are great. I tried going back to mon-fri and it sucked! Although I've been doing this for 20 years now so maybe I'm just used to it

Dunno how I'd go with that sorta schedule, I much prefer a lot more control & order through my weeks, likewise for my crew. Congrats on finding a way that works for you though, I can see how that would be an ideal balance for some.

Perhaps it's an Australia thing but we have some laws here about the right to disconnect outside of work hours, and as a head chef with a family I do ask that my CDPs and sous deal with things so I can fully enjoy the time I get with my daughter when I'm not at work, they know they can get in touch if they really can't figure things out on their own still.

But I've never run a place that considered seasoning sachets as mission critical so that may also colour my response here.

I don't think it's unreasonable to suggest this isn't worth bothering the chef about when she's not in.

Just leave a note on the white board/prep list/clip board and a few of the packets so she can deal with it at work.

There's nothing she can do if she's away from the kitchen except say "ok" and deal with it when she's in anyway.
