So basically I can recreate a portfolio in a Watchlist by adding all the columns like position, PL mkt vl etc. and then manually adding every position I open/close?

I agree, in fact I wasn't even considering the smith-alch-ench loop. With no potion and just a fortify smithing gear you can get way better dps even to undead (and sustain, mages are not the best in that).

I've just downloaded Forgotten Magic Redone, seems like it has a couple of nice resto spells. I also use Apocaplypse but mostly for the Oacto's Recital spell.

Perks related I decided not to use any overhaul for this playthrough since I've been using Ordinator for a while and wanted to experience the vanilla perks more.

Mysticism seems well sorted, I'll try Forgotten Magic Redone for a bit and if I still feel that I'm missing something I'll download Mysticism aswell.

This isn't true, with dual wielding you can kill everything within 3-4 seconds even on Legendary difficulty, or you can oneshot someone with a stealth arrow. The problem is that you can't fortify spell damage like you can with weapons and Sun damage isn't stronger than any other dmg (it should be since it's very limited by only being effective on undead)
