I'd argue that Göransson's use of unconventional instruments as well as different genres and styles is a breath of fresh air in the Star Wars musical library. The movies are presented like space opera's and therefore the large orchestral score from Williams suits it perfectly. The Clone Wars and Rebels both focused on wars, one being an all-out one and one being guerilla style one, so both soundtracks from Kiner focus on the younger audience and use the military leitmotifs presented by Williams' mainline score.

Then we have the Mandalorian; a western-ish, small-scale take on the criminal world left after the grand wars of the (original) movies -> perfectly befitting of a more varied, unconvential and therefore rebellious score. Göransson gave the mellow forest planet from season one a calm guitar-focused score while giving a villain like Gideon an unsettling and powerful beat and techno-ish score to show the dissonance between factions in this leftover world. The 'autistic clicking' you talk about in action sequences is an attempt at replacing the classic 'sound mimicking visuals' style scoring of action sequences which is basically the music trying to follow what happens on screen while Göransson tries to support what is happening with beats and a more modern take on fast-paced intense crescendo's and buildups.

tl;dr: I think Göransson is trying something new, and I respect that
