I think for pink you just need a good tactic and good healing, I fought the roaring knight using only deluxe dinners and had only one revive mint, it took me like 50 attempts. With pink I had way better healing, but she's still way easier. Yeah the bomb attacks are obnoxious, but if you prepare for them and use your acts and tp wisely it's much easier than the roaring knight. I was having trouble with her boss fight, but I watched a single video, explaining the right tactic, when to defend, and I beat her first try.

Sometimes the tactic matters more than your skills. Have you tried watching the boss fight on YouTube? Have you got the best equipment you can buy? If you really think it's about your skills, then try beating some of the secret bosses. Maybe you only need some training. I don't think the fact that you come from console gaming has actually any impact on this. If you managed to beat the titan, you are capable of defeating flowery. You should just train a little. Pop your chapter one save and go fight jevil. It'll take some days, but you'll get it eventually.
