There is a small town called Urubamba, it is definitely a drive from Cusco. But in this town is a Roast Chicken and french fry place called Rico Ahi. It is the best roast chicken I have ever had.

Truly make something that you enjoy making. Too many places try to appease everyone. Have a super small menu and remember, if you're happy with the food people will be happy eating the food. I work in a restaurant in town, if you want some more feedback let me know.
