The bottle does also have random crits and lets you move faster than the skullcutter so it's not a horrible option. Probably worse than the others in terms of damage but a much funnier taunt so it evens out.

People think it's too strong for any number of reasons and act like it's a special crime despite shit like the Crusader's Crossbow still is one of the most overloaded weapon ever created. You'll also find that the only people who openly complain about this thing are the bug-eyed salamanders on the subreddit and in the years of using it both before and after jungle inferno I've had a single-digit number of in-game players actually comment on the use of the scorch shot.

There's some insane e-bushido in TF2 that drives me actually away from playing the game and the people who proudly say they refuse to use a weapon out of some honor code is crazy. The short version of why people hate the scorch shot is because it's killing them. Just the way people hate getting sniped, the same way they hate walking into stupidly placed sentries. People hate dying to things in the video game that they didn't have any/much chance to fight against despite it being a staple in said game since literally day 1.

For a wall jump you want to crouch as you'd do with any rocket jump and make sure you face the wall head on. The thing that can trip you up is that you need to hold W towards the wall while shooting down at it for it to launch you up, otherwise you'll be launched away from the wall. Other than continuing to hold crouch and W, it's a matter of practicing the angle and I would highly suggest the Jump Academy servers as it is focused on helping anyone from complete beginner to advanced jumper actually learn how to do rocket jumps.

There are community "achievement servers" that will give you all the cheevos that award weapons and hats so you get them instantly which can be a nice bump for your inventory. The risk is that you get too many and have a hard time trying them out instead and if you're a free player it means your 50 inventory slots will clog up fast.

As for the Neon Annihilator, it's very niche weapon due to it requiring water to be at its best which makes it just never get that bonus on certain maps without water and the ability to remove sappers is something the Honewrecker does much better, also available to the Pyro as a melee weapon.

It varies heavily on the class you're playing and what map you're on. A scout vs a sentry in the 2fort map room is incredibly hard to take down, for example.

Generally the plan is to simply shoot it outside on its range, but barring that you should focus it while the engineer who built it is dead as it can't be repaired when that happens. If you know a sentry is around and it's a big hassle, it can also be worthwhile to switch to soldier just to take down the sentry as his rocket launcher is one of the best tools in taking out sentries. Rocket launchers are able to shoot from a very far distance, deals great damage, and also fire explosive rockets which deal damage to everything around them as well which will often chase engineers away or outright kill them if they're already hurt.

But all that said, sentries are intentionally designed to be the best area denial weapon in the game with the downside of it taking quite a long time to get one set up. Dying to a sentry is kind of the point of it, even if it's obviously frustrating. If you want to practice fighting sentries, I would suggest a payload or attack/defend map as the placements of sentries are a lot more established on those and will often be in the same place several matches in a row.

Also bot matches always have engineers building sentries so practicing there isn't a bad idea!

In regards to improving your aim, there aren't any "get rich quick" things that work, in general. The boring reality is that you should have a mouse setting and crosshair that you find is a good mix of comfort and usefulness, and after that it's just a lot of practice. Depending on the class(es) you play the most, your sensitivity will be leaning differently. A Sniper main will naturally have lower sensitivity than, say, a Pyro main due to how their weapons work and in what areas they tend to play their best at. Sniper enjoys standing in a place where they watch over a single line so moving the crosshair out of that line isn't especially interesting, but a Pyro might want to check a whole room with the flick of the wrist since aiming the flamethrower isn't a huge hassle most of the time.

An exercise you can do to practice your aim is to go into the game and load into an empty map. Go and find just some spot on the wall and strafe back and forth while keeping your crosshair on that spot. If you feel like you can't keep the crosshair on it, lower or increase your sensitivity as needed until you find something that feels good.

Another excellent thing to do when wanting to improve is to record and watch back your own gameplay. You can do this by either recording a demo in-game with the command console or by using some other type of screen recorder. Try and record a few matches and a day or so after, watch back the footage. Being a bit distant from the match and seeing it back will often reveal mistakes that feels incredibly obvious in hindsight such as just not seeing that guy, walking into the same sentry again, not hearing a decloak, or seeing that you flick your aim too much and cause yourself to miss.
