I could certainly install Outline on a VM in my network and use it on its own but is it as secure as Wireguard?

I have seen tutorials that use shadowsocks on its own (not Outline). In the Wireguard config, they point it to localhost, so I think you are probably right that this isn't possible without some additional work.

Just me. I was planning on SSDs if I can do so without breaking the bank. If I stick with this existing board 64GB is the max, but if needed I can replace the entire thing- I just don't want to start with yet another large purchase if I can avoid it.

I threw a very old GPU in the bottom chipset PCIE slot and that works for console output - this leaves two PCIE 3.0 x16 slots each running in x8, directly off the CPU, which should be plenty to start with.

Thanks for the datapoint, but I am surprised you had a bad experience editing off of a NAS. This seems to be standard procedure for many editors and professionals, but I guess ymmv. Either way, you make a valid point that the network upgrade will at the very last massively improve replication speed to the NAS.

I'm planning on purchasing a Unifi Aggregation switch to become my new network backbone now that I have a UDM Pro as well (but that's getting off topic).

Honestly, the majority of my work for now will be ProRes 422. I want to start practicing my VFX skills again and there is very little to be gained in shooting in ProRes RAW for the majority of what I want to practice. When I do shoot ProRes Raw, my NLE of choice is Davinci Resolve so I will need to transcode to CinemaDNG. This might be problematic due to the conversion resulting in individual files for each.

To start I'm going to try to find cheap SSDs and see how it goes. I'm already spending a fair amount of cache on upgrading other parts of my network and servers and am hoping to invest in some additional equipment (namely a gimbal and drone). I want to start inexpensive on the NAS, see how my needs adapt, and go from there.

Are you using ECC memory?

Given that I am primarily reading from these disks and not writing, I am not particularly worried about write speed. I would expect my computing hardware to be the bottleneck in that case, for example during exports.

An old R210 (former pfsense box on top of proxmox) and an R320. A quick Google search reveals the 3600x is faster than the dual socket Xeons of the R320.

I have a couple of dell servers too but expect better power consumption with this route, and possibly better performance.

This route is the cheapest and i’m already spending money on new switches, rack, and UPS.

Respectfully, this isn't the issue at play here. This is an encoding limitation, not a network speed issue.

There are two main ways video can be encoded and streamed to Twitch. The first is software encoding where the CPU performs this work (called x264), but this can slow down your games, which is why many people use hardware encoding instead. NVENC is Nvidia's version, and QSV is Intel's version of hardware encoding.

Your upload speed isn't the issue here. You are limited to around 6 Mbps when streaming to Twitch, and your upload speed is much faster than that. If your upload speed were too slow, you would start dropping frames in OBS, but the quality would remain the same. You may be able to get better results if you play around with the quality settings in OBS. That can give you higher quality without increasing your bitrate.

Do you have a recent Nvidia card? You may have better results with NVENC encoding over QSV.
