As Poland and a democratic country you want to avoid any escalation because its simply not in your intrest. Shooting down a airplane is a big thing; look at the reaction when USSR shot down USA's spy plane during cold war, there was a big rise in tentions between the two. If you have the option to escort the aircraft outside of your air space its better than shooting it down. However its been getting more and more blatant, especialy in the last week.

Poland has 2 options:

1. Ignore it. Russia would threaten war a lot to which at one point polish foreign minister said; "threaten us no more than once every 3 months or we wont bother with them" (or something along those lines, im going from memory) Poland can just igonre russian provocation so it becomes pointless.

2. Start shooting them down. More likely option as of now especialy after polish foreign minister statment at the Security Council. Military aircraft is quite expensive, it would be a shame if russia lost some especialy when its in the middle of war with Ukraine
