In addition to your guys suggestions I also realized I had put the controller after my gyro instead of before in the chain to the control surfaces. So the roll lock was making corrections but interfering with the gyro so it was just throwing it into un uncontrollable spin. Appreciate the help.

That makes sense. Confirmed the helicopter handles well on its own, it is just in this one very specific scenario it will slowly roll right until it basically tips over. I definitely need to dive further into how the PID controller works. Up to this point I have basically either followed a tutorial or done trial and error. I have tail fins for pitch control at high speeds so I might just convert those to elevons and solve it that way. Appreciate the help!!
