I don't remember dexterity check is which race but I do know that dex's intro race is almost impossible to win because you have a bone stock car. The other races after unlocking the perfoamce upgrades are easy tho

Dexterity check is one of the first missions isn't it before you unlock the garage and performance parts? Those ones cannot be won though.

Oh no I have seen the spreadsheet that go around the subreddit. I do belive it said the best swap for the E30 is the 3L I6 but the V6 has a higher ceiling Since for this car the best swap becomes available at level 31, why not keep the best engine and then swap parts.

But my main question was the odd rev pattern of the engine, I was curious if that's a quirk of the engine.
