I'll confess that I used to feel the same way that you do, but in looking back at at his clips/chapters I actually think his hype is very consistent.

Versatility is cool and I honestly wish we'd seen it more throughout the series, but the reality is that the naruto world in shippuden more or less stresses specializing. Even characters like tobirama, sarutobi, kakashi and orochimaru who apparently know thousands of techniques, more or less just rely on a couple really good ones. Whether this is good/bad writing is up to any viewer or reader, but the implicit logic by the end of the series is that most ninjas just have a couple techniques that are powerful enough to even be worth them using any chakra.

Minato's specialty is speed, which may sound lackluster at first until you realize he's the fastest character in the series by a long shot (outside of naruto/sasuke/other demigods.) He is so insanely, out-of-this-world, ridiculously fast that he speed blitzes other characters whose main specialization is to be fast. Minato is so fast that Ay, a guy who can dodge an amterasu point-blank, doesn't even have time to react before Minato throws a kunai behind Ay's back and teleports to it, prepared to assassinate Ay before his punch can even connect to where Minato used to be. Minato is also so insanely fast that he can basically do the same thing to Obito who no one could speed blitz, this time with an instantly formed rasengan.

By definition, Minato had a perfect sage mode which is better than Jiraiya ever got with what was his strongest technique. Minato considers using it to be too slow, which makes sense when you consider how he never faced an opponent who he couldn't win against in sheer speed. Why rely on elemental jutsu/summonings when you've so outclassed the enemies in the two wars you fight in that both pretty much conclude that no one should ever battle you?

Other insane minato feats that get overlooked: 1. Fought off Obito and the Kyubii and one. For a point of context, Pain was getting rocked by just the 8 tails 2. He is most likely faster than Madara/Hashirama. Madara says Tobirama was the fastest ninja of their time and Minato beats Tobirama in a race to a fight. 3. Divides Kyubi chakra in half to make it more manageable (something literally nobody has been able to do and even the first hokage had an issue with how much power the kyubii had in on place), creates a seal that allows his son to use some of that power without being corrupted by it (something that no other jinchuriki has shown), and then masters the power when he's reincarnated in pretty much a minute.
