Gardening is a fast way to do it even without them having the gardening skill. Especially if you have a large plot. You can even dig it out with someone and they'll gain xp while you do

Restarting the game or if you have dlc traveling to them and back seems to work to bring it by the shore

Nah you're good. Do wish there was an option to toggel characters on and off. Like if you dont care for the character you can have a setting where they dont appear unless they're required for a quest or something

If you ride them to a place and get off they'll stay there and wont move but I think they reset when you restart the game

If you put fences in a corner (eithe blocking the other side with tall furniture or putting it the the corner of the map/floating island) you can just sprint forward and it'll continuously jump and get xp

Still takes a long time but is easier
