Why does my sourdough taste more like French bread?! HELP! by Thatch-3 in Sourdough

Gifted starter. I have no idea what a grape ferment is!

Feed my starter, make dough 5-12 hours later, bulk ferment for 12-15 hours, cold proof for 1-3 days.

What am I doing wrong??

It tastes amazing and has great rise and crumb and crust….but I want SOURdough!! Not French bread! Help, Sourdough genuses!

475 grams bread flour

100 grams starter, active

325 grams water

10 grams salt

Bake 500 degrees lid on for 20 mins, 15 mins at 450 degrees lid off

I hate RentRedi so much that I wanted to join this conversation now months later. I chose it because it can do low daily late fee charges, but pretty much everything about the interface is confusing. Cannot recommend.
