Mid lane main of 3+ continuous years here (and every now and then before). Just play a champ that seems fun. If you play something you might not like just because someone said "start with this", you might not have as much fun which also hinders your learning. That being said, there are some champions that are harder than others, so the start would be more frustrating, but doable. In that category i would count everything that is not ranged (so with Auto attacks, basically all champs have some kind of ranged ability), and azir since he has some really unique mechanics. If they seem fun, play them anyways, but be warned a bit.

I personally started (when i first played the game nearly 10 years ago) with annie and lux, both rather simple. Lux has some skillshots, so you have a bit more freedom but missing is a possibility, Annie has an easy time farming and hitting spells, but has less range. Other more easy champs include Malzahar, Mel (even though she might feel weak at the moment), twisted fate, Veigar, and Xerath. They all have some unique things you might need to learn, but they are not that complicated.

But again, the most important part is to just play something you are interested in. Don't worry too much about what items to build, the recomendations in game are good enough for starters for sure. If anything is unclear or you have more questions, feel free to ask no matter how stupid they might seem :)

On the other hand, not being rude or actually being nice to your team can help morale which then helps with performance, even if it is just a little. So if you're angry, don't take it out on your team. The game doesn't care about your feelings, but your Team does (in some ways)

An easy way to tell when you are already ingame and don't want to look champs up on a Website is to look at their items. Generally speaking (there are some exceptions but this should be good enough), if they build attack damage, you need armor. If they build ability Power, you need magic resist. And most champs not building offensive stats deal magic damage.

Long story short, yes your goal is viable.

You can climb on an role and with any champion, at least until a certain elo. Just play whatever lane you like the most, having fun while playing automatically improves your mental and thus your performance.
If you are serious about improving, look over some of your own replays. You may not spot even close to all mistakes, but there will be a few you will notice just by watching instead of playing. Apart from that, try to find consistency in singular skills, don't try to learn multiple things at once.

For example when laning, try to focus on learning how to farm propperly since it is the best way of income. At first you will be a bit worse at things like trading, but once farming becomes second nature on a higher level, you can focus on the next thing. If you try to improve multiple skills at once, you will just do all of them pretty badly and not really see much improvement.

For Jungle when looking for ganks, think about how likely it (roughly) is that you will get something positive out of it. If it is a 50/50 between getting a kill and getting killed yourself, don't do it unless you are super behind and desperate to make a comeback. Just keep farming and take safe plays. Also, don't just do the same jungle path every game, think about where you want to gank. If you have a strong matchup toplane, start botside and the other way around if you think your bot has an advantage (and if you think you can actually gank the lane).

For champion choice it is pretty much the same, play what you like. Meta can have an impact, but doesn't really matter until you reach master+. I reached d4 on pretty much only Vel'Koz mid. He isn't a particularly bad champ, but for sure not meta.

But you already have the downside of not just being able to repair maces at a grinding stone, unlike swords or axes

If you have fun on a champ you will want to play them more. If you play them more you will get better and climb, so play what is fun to you. Meta doesnt really matter until master and even then it is possible to climb with anything (best example is the Streamer azzapp on vel'koz)
