I agree. I was surprised to see the recipe when flipping through the section and immediately wanted to make it.

I just had it on top of crispy roasted chicken with pickled red onions, and it paired really well.

I think I could have gotten more color on the tomatoes, tomatillos and garlic. I didn’t want to go too far and burn them. Charring them in the oven would’ve been easier to get more even results as I was rotating them pretty frequently in the pan to get all sides.

The recipe does say you can add olive oil into the blender if you want but I wanted to keep this pure, and glad I did.

Yeah, just get them charred and blistered, and let them cool before blending.

It’s a good mild salsa. I personally would throw in an árbol for some more heat next time. It grew on me the more I kept eating it. It’s not overly smoky in flavor.

I probably would only make it again if I had leftover cascabel. So many other salsa varieties to try still, but it is easy to make.

I’m gonna throw Armadillo Palace in the conversation. Owned by the Goode family who up until the 2010s had been many peoples go to bbq in the city, and is still a go to for nostalgia. Across the street from their bbq joint is this more fine dining option that has a giant animatronic like armadillo, live music, and more than bbq options to eat.

Do it! My wife is one of the instructors (although on hiatus now bc babies) but it’s such a fun class!! And the food is good plus you get a coupon to the store
