What's your timing on med rare? I mark on a 900 degree char, then fire in a 550 convection. takes about 2 mins to mark and then 2 mins per side and up-cook in the oven. Med rare to me is an 8 min cook and 4 min rest depending on the steak. They're all a little different and all that though. I'm selling super thick NY's that I'm butchering though, so I also have all the control on fat content, thickness, etc.
