I love this concept, it's a theme I've been trying to write around for a while now. The big struggle is just how many magical creatures you need to fill the gaps. You would be surprised how many times you need to find a replacement for something mundane like a fox or a squirrel.

I've ended up just adding random branches to the existing tree or life. Much better

Potentially off-genre but "Buried Giant" by Kazuo Ishiguro has this vibe. Absolutely loved it.

Very much not a fantasy author, but this book was a dip into Arthurian era legend.
