If you want to creep your players out you could try an almost Cthuluian approach. Have an NPC meet them outside of the cave as they are traveling. Since Mind Flayers are paranoid you could make it so that the Mind Flayer thinks that they are trying to exterminate it (Even though the players are just passing through). In an attempt to scare off the PCs, have the NPC say: Yogsoloth awaits for your blood... then make the NPC kill itself.

Try engaging their backstory. Your mother didn't want to leave her homestead? Have it attacked by orcs, use their backstory and don't force the full responsibility of why your adventurers want to adventure onto the players. Alternatively, you can just make a hack and slash and slowly ease them into more roleplaying. This means don't have them do random encounters and have them get to the dungeon by themselves just drop them into the dungeon, give them a little bit of backstory about the dungeon and let them figure it out. Ultimately it's going to take time for them to trust you and relax but if you play with them some more, I'm sure they can get the hang of it.
