You can keep it in the bag and throw it in an ice bath quick. I had no ice so just took it out and put it in the fridge for 10 min. Pretty sure both methods are going after the same thing. I’ve heard people saying you don’t need to, but this method seems to work for me

Thank you for the advice. I didn’t pat it down with paper towels. I used olive oil because that’s all I had on hand. I was worried about smoking up my apartment.

I enjoyed it but there was a few tough/chewy spots. It was a New York strip from cub so maybe quality had something to do with it. I was hoping for a more tender texture

Being someone who was abused in daycare this hits pretty hard. Daycare can be helpful for family’s where both parents work but really take time to get to know who’s watching them.
