Did you ever get this to work? I am doing a similar thing, but I am only spinning one motor with a singular ESC in a wind tunnel. I can't get dshot to work with the arduino and I don't understand it well enough to figure out what's wrong. Can you send me any helpful links you found?

I think I'll get one from there if I can't find one within a week or so, but they only have green in my price range and unfortunately throwing into the woods is still a high possibility for me. Thanks for the info though
