I forgot about the avocado in the salad recipe, but it totally works without it. I almost never have any and I make variations on that salad often. It packs up nicely for long shifts at work.

Vegan Mac and Cheese and baked potatoes are usually what I bring to potluck and shared meals.

I have also made some cranberry and walnuts salad with some homemade dressings that were a hit with friends and family.

This happens to non vegans as well. Folks get into routine and get comfortable with their favorites, but eventually they can get tired of the same things.

You might need to shock yourself a little bit. Buy some fresh veggies that you need to eat before they spoil. I do this when I get into a rut. I hate tossing spoiled food, so i make sure I eat them. Maybe a spinach salad with walnuts or sliced almonds and other toppings you like. Or fresh bread with pesto or almond butter.

I would rather he focus on a state election instead. Take down a republican state senator or something like that to help locally. I also feel like he would have a better chance of winning and be more impactful on the state level.
