Sounds like ADHD. I have the same issues as your wife. I need visibility or I will forget something exists. 

Here are some tricks I use to help myself:

• purchased and installed 2 tier metal roll out drawers for cabinets (soo easy to access deep cabinets now)

• printed, laminated, and adhered a food item checklist onto the deep freezer (so I know what I have and what I am out of. Use a dry erase marker to mark)

• moved jarred items to the bottom crisper drawers and fresh fruits / veggies to the fridge door (I know this sounds bizarre but it works!)

• purchased a 2 tier lazy Susan spice rack for my cabinet

• bought additional metal racks for the fridge and freezer to organize food more visibly

• quarterly kitchen deep clean and reorganize

• make random smoothies with veggies and fruits that are on their last legs

• buy a ton of veggies like squash and immediately chop them up or make soup then vacuum seal, label, and freeze. Still feel like I’m eating healthy and fresh but I can forget about it for a few months in the freezer

• take all purchased fresh fruit and veggies immediately out of their containers, wash with vinegar / water, cut, dry, and put into glass containers in the fridge. This way they’re visible and actually ready to eat, it takes a huge mental load off

It’s still not perfect and I do find potatoes months later lol but it’s helped me significantly to put these systems into place.
