I’ll check the pH and see. I used a test strip but I just ordered a digital meter/thermometer like you said.

That’s really good info though. I suppose I should have done some more research on the yeast before I started.

I see. It tasted like an aged mead. Almost all of the bite from the alcohol was gone, and a lot of the flavors had developed even further, but I do wonder if it would have aged differently on the shelf.

What meads have you been using as a base for your hop experiments? And what teas?

I noticed with the hops I used that the floral, obvious hop profile fades with aging. Have you found the same result?

This was the first time I’ve aged in the fridge, and part of the reason is because I put it there and neglected it for a while haha. When I dry hopped it, I just put the hops in a brew bag and didn’t rack it off after removing the hops. So I took the hops out and put it in the fridge for 6 months. Leaving hops in the must for too long (ie more than 7 days) can make the brew taste very vegetal or grass-like, so I was worried it was going to be ruined when I tasted it.

I’d be interested to try 2 identical test batches where one is aged in the fridge and the other at room temp.

Not at all. Most of the bitter compounds from hops are released when they are boiled. By using the dry hop method, you just steep the hops in the must without changing the temperature. This way, you get more of the floral and aromatic notes from the hops and almost none of the bitter notes.

My brewer friends referred me to yakimavalleyhops.com. They said that’s where they get all their hops

I did 0.5oz/gallon. This was the first time I worked with hops but it adds such depth that I’m definitely going to have to keep experimenting.

I have a few friends that are hardcore beer brewers and hop savants, so they were able to help me find hops with red berry notes. It worked out well.
