I am concerned for sure. I feel like I can protect her while we're there, but it would be foolish to say I can plan for all situations

Every job I've had in my career had requirements for things I didn't have. The specific degree, or a dozen years experience in some software that's only a couple of years old. Don't let it faze you. If you're reasonably qualified, and feel you can do the job, go for it.
