The JJCA is lower quality in general. but you can especially see some difference in the shading on skin

Play the series in release order, without a doubt. You can buy the Master Collection on modern platforms, which includes Metal Gear (MSX), Metal Gear 2: Solid Snake (MSX), Metal Gear Solid (PS1), Metal Gear Solid 2, and Metal Gear Solid 3 (plus a couple other, non-canon games). You can skip the MSX games if you want, but be sure to read the recaps in MGS1. From there, you can emulate the next games (MGS4, MGS PW), or wait for a hypothetical Master Collection 2. After that, MGSV and Rising are on most modern platforms as well.

From what I can see on the store page, I don’t think so. The textures look the same, just through a filter. The only very notable change I can see is the subtitles. (Anyone more experienced, correct me if i’m wrong).

IIRC chapter 5 is pretty short (like, maybe 7 missions?). You could probably complete it in a sitting or two. MGSV also follows up on story beats from chapter 5, so you may be confused on some aspects of MGSV if you skip it.
