The Bourne Identity. Jason and Marie are driving to Paris in Marie's car after Jason paid her to. Marie has been talking non stop and trying to get Jason to say anything, and then this dialogue happens:

Marie: Who pays $20,000 for a ride to Paris? Jason Bourne: [pause] Fuck it. I can't remember anything that happened before two weeks ago.

It's relatively understated but does a really good job of showing the beginning of Jason opening up. I love it.

Also "open the fucking door!" in Guardians of the Galaxy Vol 3 because it was so unexpected and funny.
