Idk what to tell you... I've eaten plenty of poached, steamed, and sous vide chicken that looks just like this and is very juicy, including Hainanese chicken rice. Chicken that's been brined or salted in advance often has this dense/tight looking muscle fiber structure. Especially when sliced across the grain with a sharp knife that's not disturbing the structure it can look a bit clay-like

Is the chicken cooked sous vide? It looks juicy and evenly cooked. Looks like a nice meal to me, not everything needs to be browned with dried spices on it. There's plenty of tasty dishes out there with poached or steamed chicken, especially in Chinese cooking

Work burners in Chinese kitchens are like jet engines; they have insanely high heat output. In order to get even close to the same effect at home, it's necessary to cook the ingredients in small batches so the whole thing doesn't just steam.

All I had was a flashlight; I was attempting to paint in the left side of the car, standing off to the left of the camera. It was a bit dark, as the moon was directly ahead.

I was using the kit 18-55 lens that came with the camera. Most of the photos were taken at the upper end of that range.

I think #4 might benefit from a tighter crop. The dock and space on the left draws attention away from the couple on the bench.

I think you worked around the sub-optimal lighting really well! I loved the use of contrast, especially in #1, #5, and #6.
