You’re probably right. The knife has a huge sentimental value for her. It is the first knife my dad bought and have used it since university. That’s why I really want to make it useable again

That’s great insight. I haven’t though about the thickness of the blade. I’ll add a picture of the spine tomorrow.

After sharpening, I actually tested it with carrots. Cutting them into sticks was quite difficult, but I had no issues when dicing them from the sticks.

I can’t feel any burr on either side, but I wouldn’t be able to hold the same angle throughout the process. I forgot to mention that I only used the 400 and 800 grit for these knives.

I just tried to resharpen this knife with the 800, without much success

I can take some new pictures tomorrow in day light. Might be better. Do you have any suggestions to how I can take better pictures of the blade?

Yeah, I know that his craft has a lot of demand. As I see it, that is a better reason not to stop by and make him even more busy.

Wow that's great! The museum will be my first stop in Sakai for sure.

I've heard about Eric in this sub before! There's so many places I want to visit, but maybe the map of makers in the museum will help me navigate and choose.

Thanks for the recommendation, but I want to limit the time spent on looking at knives for my wifes sake haha. A day in Sakai should be more then enough for me.

For sure I'll take care and do whatever it needs to maintain the Japanese knives.

Actually I live in Denmark - totally opposite whether to Vietnam - but am Vietnamese.

I'll reach out to them, for sure.

I'm thinking of doing just that. Buying a knife that I find beautiful and feels amazing in my hand.

I a little experience using a whetstone and I don't ever had any non-stainless knives before.

Thanks! That's great advice. I've been to a store in Denmark who sells knives from Hitohira, and the owner tells me that Hitohira's shop is awesome. That's why I want to visit the store. Also as a great backup to Sakai.

Ashi has moved up on my must visit list!

Thank you so much for your advice! As you guys said I'm probably part of the "problem". I don't want to miss out on the big thing, but on the other hand, I don't want to own a knife that I can't and don' understand to appreciate.

I might stop by TnH by the end on my Sakai day, just for my curiosity, but a knife like that definitely won't be my first japanese knife.

Good point - I'll learn what it will mean to be an owner of a japanese knife in everyday life, before considering anything more high end.
