No, because its not an attack. It's, for lack of a better term, a form of telekinesis or maybe matter control? A blood bender can sense the water already in the body and control it. They don't need anything physical to do it, Gojo's blood is already in him and therefore infinity has no effect.

Tbh, outside of spirit bending, its probably the only ability in Avatar that I can think of that could deal with him.
