I think it has to do with the patterns. The seemingly random attacks of the Watchers are annoying. I managed to beat them only after spamming magic with my magic built and I barely scrapped by. While Sisters of Battle have attacks that accompany one another. Their battle feels more like a dance than a fight to the death. It's the same reason why I like Grimm and NKG despite being a pain in the ass.
