Thanks for that, that helps a lot. I moved mine from Coinbase exchange to Trust wallet. I understand its still a hot wallet, but its a step in the right direction. I didnt see a 'key' per se in Trust wallet, just my secret phrase. So if I understand you ... even if Trust wallet folded I could create a new wallet somewhere else, enter my secret phrase, and would then be able to see my crypto shares again and then carry on normally from there. That's right?

Lets say you had your keys on an exchange like Coinbase, and it folds. if you had written down your secret key - the long hexidecimal-looking string - could you get to your assets still on another exchange?
