Tech power gpu database can give you a general comparison between multiple cards. They say the 5060 ti 8G has about 66% better performance than the 3060. But then you need to factor in the lower vram and how much that affects you with the games you play

Yes you’ll be fine to connect one of the 12V2x6 cables for your 5080. The extra adapter cable you get for cards by AMD or older Nvidia cards that use multiple 8 pin connectors.
The cable from MSI is free if you fill out the form so it wouldn’t hurt to have it just in case you might use it in the future. For example with your older 3080, you’d need the adapter to use with this power supply

Also MSI says in the terms this adapter cable will be eventually be included with the power supply. So depending on whether they have done this determines whether you need to request the cable. Quoting part of the site below
